  • 8 oz mini portabella mushrooms, sliced
  • 4 egg whites
  • 3/4 cup milk
  • 1/2 small diced yellow onion
  • 4 large eggs
  • 3/4 cup swiss cheese

  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon black pepper
  • 5 cups spinach

Instructions
