Winter brings about some fantastic vegetables, as well as the desire for warming, comforting food. This soup combines those two wintery concepts to create the perfect meal for a chilly day. Hot and spiced, this soup is packed full of goodness and super easy to make.
Ingredients
(Serves 4)
- 3 large carrots
- 2 large parsnips
- 2 large white onions
- ½ white cabbage
- 2 tablespoons oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground turmeric
- 1 teaspoon chili powder
- 2 cups veg stock
- ½ cup coconut milk
Instructions
- Chop up all the veg into small pieces
- In a large pot heat the oil and add the onions, carrots, and parsnips
- Fry for 10 minutes, and then add the cabbage, all the ground spices, and the chili powder
- Fry for another 10 minutes, and then add the veg stock and the coconut milk
- Increase the heat and leave to simmer for 20-30 minutes, stirring occasionally
- Check the veg is soft and cooked and then take off the heat
- Leave to cool for 5-10 minutes, and then blend with an immersion blender
- Return to the heat for 5-10 minutes before serving, stirring continuously
- Serve with crusty buttered bread
