Three Healthy Breakfast Ideas

If you find yourself stuck for what to have for breakfast, or eating the same thing over and over again, check out these three quick, healthy ideas which will bust you out of the breakfast rut.

Tinned Fish On Toast

Ingredients (to serve 2):

  • 1 tin of fish (such as sardines, mackerel, or tuna)
  • 2 tbsp of tomato puree
  • Bread
  • 1 tbsp of olive oil
  • Handful of green herbs (such as cilantro, oregano, or basil)

Ingredients:

Mash the fish with the tomato puree and olive oil. Finely chop the herbs and stir them through the paste. Take 2 slices of bread. Spread the fish paste over the bread and grill for 5 minutes, until the bread is toasted.

Seed and Berry Bake

Ingredients (to serve 2):

  • 1 cup of chia and flaxseeds
  • 1 cup of mixed berries
  • 2 tbsp tahini
  • 2 tbsp honey
  • 3 tbsp water

Instructions:

  1. Stir the seeds into the water, and set aside for half an hour.
  2. In a pan, heat the berries. Once they start to fall apart, add the tahini and honey.
  3. Mix the berries and seeds together, pour into a container, and leave overnight in the fridge to set. Serve with yogurt and fruit.

Spinach and Mushroom Hash

Ingredients (to serve 2):

  • 1 cup potatoes
  • 1 cup raw spinach
  • 2 portobello mushrooms
  • 2 cloves of garlic
  • 3 tbsp butter
  • Salt and pepper

Instructions:

  1. Boil the potatoes for 10 minutes, until they are cooked through. Mash the butter into them, and fry on a medium heat until the potato starts to crisp.
  2. In a separate pan, fry the mushrooms and garlic in a little oil.
  3. Add these to the potato once they are cooked, and stir the spinach through the hash until it wilts.
  4. Season well with salt and pepper and serve with a fried egg.
