Three Ways to Roast a Chicken

Roast chicken is one of the best weekend lunches – satisfying, delicious, and great for feeding a crowd. You might have a tried and tested method, but these three recipes are definitely worth checking out.

Lemon and Olive Chicken

Ingredients:

  • 1 chicken
  • 1/2 cup of olives
  • 2 lemons
  • 3 tbsp of olive oil
  • Salt and pepper

Instructions:

Rub the chicken with salt and pepper, drizzle with oil, and then roast for half of the time stated on the packet. At the halfway point, remove from the oven. Mix the juice of one lemon with the olive oil and pour over the chicken. Place the olives and slices of the second lemon around the chicken, return to the oven and cook the chicken for the rest of its time.

Thai Inspired Chicken

Ingredients:

  • 1 chicken
  • 2 inch piece of lemongrass
  • 3 cloves of garlic
  • 2 tbsp sugar
  • 2 tbsp fish oil
  • 1 inch piece of ginger
  • 1 red chilli
  • 3 tbsp oil

Instructions:

  1. Slice the lemongrass, garlic, ginger, and chili and fry over medium heat. When the garlic is starting to brown, add the sugar, fish oil, and 1 tbsp of water. Cook for a further 10 minutes, until the sauce starts to thicken.
  2. Pour the sauce over the chicken, making sure it is coated entirely. Cook the chicken according to its weight, and let it rest for 15 minutes before carving.

Harissa Roast Chicken

Ingredients:

  • 1 chicken
  • 2 tbsp harissa paste
  • 2 tbsp tomato puree
  • 2 tbsp oil
  • Juice of 1 lemon
  • Salt and pepper

Ingredients:

Mix the harissa paste with the tomato puree and oil. Add the lemon juice and some salt and pepper. Rub this paste over the chicken and cook according to the packet instructions.
