Ever spotted endive at the farmers market or in your grocery store? Grab it! The leafy vegetable is super crisp and has a flavor that is slightly on the bitter side, thanks to being a member of the chicory family. Here are 3 ways to enjoy it.
Endive Boats
This is one of the easiest appetizers you’ll ever make — and it’s so dang good! Take an endive leaf and fill it with absolutely any ingredients that come to mind! You can use a mixture of ricotta cheese, fresh herbs, and lemon zest; chopped tomatoes, avocado, and jalapeño; or a tuna mayonnaise with sliced eggs and spring onions.
Endive and Apple Salad
This salad is a take on the classic Waldorf. Combine crispy endive leaves with sliced apple, blue cheese, and walnuts. Season with salt and pepper, and top with a lemon vinaigrette. You can also do the recipe with goat cheese and candied nuts.
Roasted Endive
Endives are just as good cooked as they are raw. Grilling and roasting both work, leaving the pieces tender and slightly sweeter than before. You can then top them off with a drizzle of balsamic vinegar or pesto.
