Licor cafe is one of the most beloved alcoholic drinks in the northwestern region of Galicia in Spain. This coffee liquor is perfect as an after-dinner aperitif or for sipping at any time of the day.
Here’s how to prepare it at home!
Ingredients
- 1-liter “aguardiente” or “orujo” liquor
- 125 g whole coffee beans
- 125 g ground coffee beans
- 500 ml of water
- 500 g sugar
- 2 cinnamon sticks
- 2 vanilla pods
- The peel of a lemon
- The peel of an orange
Instructions
- Start off by preparing a sugar syrup that will be used in the preparation of the liquor by boiling the 500 ml of water and the 500 g of sugar together, stirring thoroughly to create a consistent syrup.
- Set aside to cool.
- Find a large container with an airtight top. Add the liter of aguardiente/orujo, and then add the sugar syrup that you made. Stir to combine.
- Add the ground and whole coffee beans. Stir once again to be sure that everything is combined well.
- Finally, add the cinnamon sticks, vanilla pods, lemon peel, and orange peel. Give the mixture one last stir.
- Place the airtight lid onto the container, and place it in a cool and dry place. Stir daily over the next two weeks to keep the ingredients moving around.
At the end of two weeks, filter the liquor with a cheesecloth into a bottle with a cork top. Place into the freezer, and allow at least a month for the liquor to finish “settling” in the bottle before you drink it.
