Crowd-Pleasing spinach, Bean, and Feta Tart

This tart is super easy to make but is delicious and healthy. With a generous serving of protein per portion and plenty of veg with every mouthful, this is a great dinner to make when having guests around as it’s quick and simple but with tasty results.

Ingredients

(Serves 6)

  • 12 ounces ready rolled puff pastry
  • 1 tin white beans
  • 3 cups spinach leaves
  • 10 ounces feta cheese
  • 4 scallions 
  • ½ cup fresh parsley leaves 
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 360℉.
  2. Line a baking tray with grease-proof paper.
  3. Roll the pastry out onto the baking tray ensuring it doesn’t overlap the sides.
  4. Finely slice the scallions. 
  5. Drain and rinse the tin of beans.
  6. Place the bare pastry in the oven for 5 minutes to ensure the bottom is cooked.
  7. Remove from the oven and cover with the spinach leaves – there will likely be a few layers to the leaves.
  8. Scatter the beans over to ensure they’re evenly spread across the pastry.
  9. Scatter the scallions over and spread about evenly.
  10. Sprinkle some salt and pepper over the bean and scallion mixture.
  11. Crumble the feta over the top and place in the oven for 5 minutes.
  12. Remove and then scatter over the parsley leaves.
  13. Return to the oven for another 5 minutes.
  14. Serve warm with a fresh salad.
