This tart is super easy to make but is delicious and healthy. With a generous serving of protein per portion and plenty of veg with every mouthful, this is a great dinner to make when having guests around as it’s quick and simple but with tasty results.
Ingredients
(Serves 6)
- 12 ounces ready rolled puff pastry
- 1 tin white beans
- 3 cups spinach leaves
- 10 ounces feta cheese
- 4 scallions
- ½ cup fresh parsley leaves
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 360℉.
- Line a baking tray with grease-proof paper.
- Roll the pastry out onto the baking tray ensuring it doesn’t overlap the sides.
- Finely slice the scallions.
- Drain and rinse the tin of beans.
- Place the bare pastry in the oven for 5 minutes to ensure the bottom is cooked.
- Remove from the oven and cover with the spinach leaves – there will likely be a few layers to the leaves.
- Scatter the beans over to ensure they’re evenly spread across the pastry.
- Scatter the scallions over and spread about evenly.
- Sprinkle some salt and pepper over the bean and scallion mixture.
- Crumble the feta over the top and place in the oven for 5 minutes.
- Remove and then scatter over the parsley leaves.
- Return to the oven for another 5 minutes.
- Serve warm with a fresh salad.
