Who doesn’t love soups on a cold winters day? This zucchini one is a quick weekday soup full of vitamins. It’s the perfect solution for a cold winter evening for you to enjoy with your family.
Ingredients:
- 5 large zucchini chopped into 3/4-inch slices
- 2 large potatoes pilled and chopped into 1-inch cubes
- 2 sliced leeks
- 2 finely chopped garlic cloves
- 1/2 sour cream
- 5 cups of water
- 3 tablespoon olive oil
- Salt and pepper
Instructions:
- Heat the oil in a large pot and then add the zucchini, potatoes, leek, and garlic. Fry for 7 minutes.
- Add in the water, bring to boil, and cook for 25 minutes. Season with salt and pepper.
- When the potatoes are very soft, remove from the stove and add in the sour cream.
- With a blender stick, blend until completely smooth. Taste and see if the soup needs more salt.
- Move to bowls and enjoy.
