How to Make a Quick Zucchini Soup

Who doesn’t love soups on a cold winters day? This zucchini one is a quick weekday soup full of vitamins. It’s the perfect solution for a cold winter evening for you to enjoy with your family.

Ingredients:

  • 5 large zucchini chopped into 3/4-inch slices
  • 2 large potatoes pilled and chopped into 1-inch cubes
  • 2 sliced leeks
  • 2 finely chopped garlic cloves
  • 1/2 sour cream
  • 5 cups of water
  • 3 tablespoon olive oil
  • Salt and pepper

Instructions:

  1. Heat the oil in a large pot and then add the zucchini, potatoes, leek, and garlic. Fry for 7 minutes.
  2. Add in the water, bring to boil, and cook for 25 minutes. Season with salt and pepper.
  3. When the potatoes are very soft, remove from the stove and add in the sour cream.
  4. With a blender stick, blend until completely smooth. Taste and see if the soup needs more salt.
  5. Move to bowls and enjoy.
