Ingredients

  • 5 cups vegetable broth
  • 5 tablespoons soy sauce
  • 16 vegetable dumplings
  • 4 scallions, sliced
  • 3 tablespoons toasted sesame oil
  • 5 ounces sliced shitake mushrooms
  • 1 1/2-inch piece fresh ginger
  • 3 garlic cloves
  • 1 tablespoon rice vinegar
  • 4 small heads baby bok choy
  • 1 tablespoon chili

Instructions

  1. Heat oil in a large saucepan over medium heat. Add garlic, ginger, mushrooms, and white and light green scallion slices, cooking for about five minutes until the mixture softens. Make sure to continue stirring throughout.
  2. Pour broth, soy sauce, and vinegar into a pan. Bring to a boil over a medium-high flame. Once simmering, reduce the heat and allow to simmer for 5 minutes.
  3. Add the dumplings and bok choy to the pan, stirring as they cook for about 2 to 3 minutes. The dumplings will float to the surface when ready.
  4. Remove from heat and sprinkle chilli and dark green scallion slices into the soup before serving.
