How to Make Iraqi Style Khichdi

Khichdi is a South Asian cuisine made of rice and lentils that has many different versions. Today, we bring this easy and healthy dish in its Iraqi style. You can serve it as a side dish with meat, chicken, or lamb, or make it the star of the show.  

Ingredients

  • 2 cups of white rice
  • 1 cup of red lentil
  • 1 chopped yellow onion
  • 1 tablespoon tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon Curcuma
  • 2 finely chopped garlic glove
  • 5 teaspoon vegetable oil
  • 3.5 cups of water
  • Salt

Instructions

  1. Rinse the lentils and the rice under cold water.
  2. In a medium-sized pot, heat the oil and add the onion. Keep frying until the onion is clear.
  3. Add the spices and the garlic and stir for approx. one minute.
  4. Add the lentils and the rice and mix well.
  5. Add water, stir and bring to boil. Once the water is boiling, cover with the lid and cook on low heat for 20 minutes, until the water is gone.
  6. Leave the lid on and let the Khichdi rest for 10 minutes before serving. Enjoy.
