Halloween is almost around the corner, and it’s not always the cheapest or healthiest to buy candy for your kids or trick-or-treaters. These sweet treats are quick to whip up and will go down well with guests and trick-or-treaters alike.
Caramel Pumpkin Cakes
Ingredients (to make 10):
- 4 tablespoons of golden syrup
- 1/2 cup of golden caster sugar
- 1 cup of unsalted butter
- 1 tablespoon of ground allspice
- 1 teaspoon of orange food coloring
- 1 cup of plain flour
- 2 eggs
- 2 tablespoons of milk
- 1 teaspoon of baking powder
- 1/2 cup of dark brown sugar
Instructions:
- Cream half of the butter and all of the dark brown sugar together in a bowl.
- Sift in the flour and baking powder, whisk in the eggs and milk. Stir well to form a batter.
- Pour the batter into muffin cases and bake in an oven heated to 340 degrees for 15 minutes.
- Meanwhile, make the caramel – melt the golden syrup and sugar with the rest of the butter.
- Stir in the food coloring and allspice, remove from the heat but keep stirring.
- Remove the cakes from the oven, allow to cool, and then drizzle over some of the orange colored caramel.
Chocolate Swamp Stew
Ingredients (to serve 8):
- 8 crackers or breadsticks, for dipping
- 1 cup of broken chocolate pieces
- 10 marshmallows
- 1/4 cup of cream
- 1/2 cup of mixed candies
Instructions:
- Melt the chocolate in a pan over a medium heat.
- Once the chocolate has completely melted, slowly add the cream.
- Add the candies and marshmallows, and ask your guests to dig into the chocolate swamp!
