Israeli salad is a simple chopped salad that somehow tastes more magical and delicious than a regular salad. It is so yummy and healthy, you can’t help but love it!
Ingredients
- 4 radishes
- 3-4 Persian cucumbers
- 2-3 tomatoes
- Half a bell pepper
- Half a red onion
- 1 lemon
- 1-2 tablespoons of olive oil
- A handful of parsley, or more if you like the flavor!
- Salt and pepper to taste
Instructions
- First, wash the vegetables, especially the radishes, very well.
- Mince the red onion and put that into a bowl. Squeeze the lemon over it and let it sit while you chop up the rest of the vegetables.
- Cut the radishes in half, and then with a sharp knife or a mandoline, cut the radishes into thin half-moons.
- Then, dice the cucumbers into small pieces, and do the same with the tomatoes, and bell pepper.
- Add all the vegetables into the bowl and drizzle over the olive oil, starting with 1 tablespoon and then adding another if you deem necessary.
- Toss, and then season with salt and pepper and toss again.
- Taste to see if anything needs adjusting, and adjust as needed.
- Chop up the parsley and sprinkle over the top, and enjoy!
