Israeli Salad is Everything You Ever Wanted a Salad to Be

Israeli salad is a simple chopped salad that somehow tastes more magical and delicious than a regular salad. It is so yummy and healthy, you can’t help but love it!

Ingredients

  • 4 radishes 
  • 3-4 Persian cucumbers 
  • 2-3 tomatoes
  • Half a bell pepper
  • Half a red onion
  • 1 lemon 
  • 1-2 tablespoons of olive oil 
  • A handful of parsley, or more if you like the flavor!
  • Salt and pepper to taste

Instructions

  1. First, wash the vegetables, especially the radishes, very well. 
  2. Mince the red onion and put that into a bowl. Squeeze the lemon over it and let it sit while you chop up the rest of the vegetables. 
  3. Cut the radishes in half, and then with a sharp knife or a mandoline, cut the radishes into thin half-moons. 
  4. Then, dice the cucumbers into small pieces, and do the same with the tomatoes, and bell pepper. 
  5. Add all the vegetables into the bowl and drizzle over the olive oil, starting with 1 tablespoon and then adding another if you deem necessary. 
  6. Toss, and then season with salt and pepper and toss again. 
  7. Taste to see if anything needs adjusting, and adjust as needed. 
  8. Chop up the parsley and sprinkle over the top, and enjoy!
