No-Churn Strawberry Ice Cream Recipe

There’s something magical about homemade ice cream, especially when it’s infused with the fresh, juicy flavor of strawberries. Better yet, imagine creating this summer treat without the need for an ice cream maker! This no-churn strawberry ice cream recipe is delicious and incredibly easy to make.

Ingredients:

  • 2 cups of fresh strawberries, hulled and chopped
  • 1 tablespoon of lemon juice
  • 1 can (14 oz) of sweetened condensed milk
  • 2 cups of heavy cream, cold
  • 1 teaspoon of vanilla extract

Instructions:

  1. Toss chopped strawberries with lemon juice and a tablespoon of sugar if you prefer a sweeter taste. Mash the strawberries slightly to release their juices and set them aside to macerate for about 15-20 minutes. 
  2. In a large bowl, whisk together the sweetened condensed milk and vanilla extract. Add the macerated strawberries and their juices, stirring to combine everything thoroughly.
  3. In a separate bowl, use an electric mixer to whip the heavy cream to stiff peaks. 
  4. Gently fold the whipped cream into the strawberry mixture, being careful not to deflate the cream. Pour the mixture into a loaf pan or a similar container. Smooth the top with a spatula and cover tightly with plastic wrap.
  5. Freeze the mixture for at least 6 hours, or overnight, until firm.
