Chocolate Filled Cookies
Ingredients (to make 12):
- 1 cup of plain flour
- 1/4 cup of rolled oats
- 3/4 cup of unsalted butter
- 3/4 cup of caster sugar
- 2 tablespoons of cocoa powder
- 1/4 cup of milk
- 2 eggs
- 4 tablespoons of hazelnut chocolate spread
Instructions:
- In a large mixing bowl, sift the flour and sugar together.
- Rub in the butter, using your fingertips if necessary, to create a breadcrumb like texture.
- Stir in the oats and cocoa powder.
- Whisk in the eggs and milk.
- Knead into a dough and roll out. Cut the cookies out and bake in the center of a pre-heated oven for 5 minutes at 330 degrees.
- Remove from the oven, press into the center of each cookie (wearing a glove as the cookies will be hot). Spoon a teaspoon of the chocolate spread into the dimple, then return to the oven and bake for another 10 minutes.
- Allow the cookies to cool before serving.
These cookies don’t take long to make, but you can guarantee they will disappear in the blink of an eye!
