Proteau Is a New Alcohol-Free Aperitif

We no longer live in the world when drinking alcohol is something that is implied in certain social situations. More and more people are switching to alcohol-free drinks, and there are even “sober bars” opening for those who don’t want to be tempted for any reason. The market has been missing one important piece of this puzzle and it’s finally here — the first alcohol-free aperitif.

It’s called Proteau and it’s been created by John deBary, Momofuku’s bar director and a former bartender with a lot of experience in the industry. He came up with a botanical drink that is meant to be enjoyed on its own but can also be mixed with soda water as a spritz.

Proteau is made of blackberry juice with hints of a few other flavors like fig vinegar and black pepper. “The structure of everything I make will be based around botanicals, fruit flavors, something bitter, something floral, and a bit of fancy vinegar,” deBary says. Its color resembles red wine and its creator recommends chilling it before serving, though he’s also tried it hot, like toddy, which is perfect for winter.
