Root vegetables reign supreme during fall and winter. These gorgeous vegetables grow underground, giving them distinct flavors and textures that are unmatched. Although when people hear the word root vegetables they generally think of carrots, there are so many other delightful vegetables that you should try at this time of year!

Rutabega

The world also knows this vegetable as swede, and it is a beautiful cross between a turnip and a cabbage. A rutabaga has a sweeter flavor and makes for the perfect base to a vegetable soup.

Parsnips

This root vegetable is cousins of both carrots and parsley, and even looks like a carrot! But, this white vegetable still has its own flavor that is much different than that of a carrot. The best way to enjoy these beauties is to cut them in half and roast them simply with salt and pepper or to make veggie chips out of them!

Also called a sunchoke, this gorgeous, starchy root vegetable has a flavor that is cannot be beaten. It tastes like the heart of an artichoke mixed with the flavor of a potato.
