St. Louis-Style Pizza is One-of-a-Kind

Although pizza was born in Italy and will always be inexorably tied to this European country, another hotspot for these pies is the United States. With a number of regional styles that are beloved both inside the country and worldwide, it’s easy to see that pizza is an American favorite too. One of those favorites, beloved by some and detested by others, is St. Louis-style pizza.

A Unique Taste

Hailing from Missouri’s largest city in the Midwest region of the country, St. Louis-style pizza is not for all. However, those who grew up in the area and have grown to love this style of pie will defend it from anyone who dares disparage their native pizza.

The first thing that anyone will notice when picking up a slice of St. Louis-style pizza is that it is not cut into the traditional slices of a normal pizza. Instead, it is divided up into squares which generally end up being eight per pie.

Crispy and Provel Cheese

Another big difference is that St. Louis-style pizza has an incredibly thin crust that does not contain yeast. This results in a cracker-like crust that does not bend, and can often be described as crunchy and dry.

The other main unique part of St. Louis-style pizza is its use of processed Provel cheese. This special cheese product, available only in the St. Louis area, combines provolone, cheddar, and Swiss cheeses to make an incredibly soft, buttery, and fatty cheese which is used on the pizzas.
