Some recipes will say you need to cut each of the chokes off the individual leaves, but it’s really an unnecessary step. Just chop off about half of the stem and you’re ready to cook!
Artichokes need to be boiled in water for about 30 minutes to be cooked all the way through. To infuse more flavor into them, put some aromatics in the water like garlic, bay leaves, or citrus peels. Check to see if they’re done by pulling off one leaf and trying it.
To go with the artichoke, you can either add a simple vinaigrette or if you want something more decadent, melt butter and lemon juice together. Both are equally delicious with artichokes.
