This steak and chips recipe pairs succulent steak with crispy, golden-brown chips (fries). With simple ingredients and easy techniques, you can recreate this restaurant-quality meal in the comfort of your own kitchen. Here’s how to make it.

Ingredients

  • 2 ribeye steaks, about 8 ounces each, at room temperature
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 large potatoes, peeled and cut into thick chips (fries)
  • 2 tablespoons vegetable oil
  • Optional garnishes: chopped fresh parsley, garlic aioli, steak sauce

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Pat the ribeye steaks dry with paper towels and season generously with salt and black pepper on both sides.
  2. Heat the olive oil in a large skillet or frying pan over high heat until smoking hot. Carefully add the steaks to the pan and sear for 2-3 minutes on each side until well browned.
  3. Transfer the seared steaks to the prepared baking sheet and roast in the preheated oven for 5-7 minutes for medium-rare, or until cooked to your desired level of doneness. Remove the steaks from the oven and let them rest for 5 minutes before slicing.
  4. While the steaks are roasting, prepare the chips (fries). Place the cut potatoes in a large bowl and toss with vegetable oil until evenly coated.
  5. Spread the potato chips in a single layer on the lined baking sheet, making sure they are not overcrowded. Season with salt and black pepper to taste.
  6. Bake the potato chips in the preheated oven for 25-30 minutes, flipping halfway through cooking, until they are golden brown and crispy. Once the steaks have rested, slice them against the grain into thick slices. Serve your food hot, garnished with chopped fresh parsley and accompanied by garlic aioli or your favorite steak sauce on the side.

We don’t know about you but, sometimes, when we cook our own unhealthy food at home, it makes us feel better about it being unhealthy. Because, after all, you do have more control over the process and can choose just how much oil and salt to use. Anyway, whether you’re deluding yourself into thinking making your own chips is better for you or just like the challenge of making things on your own that are typically store-bought, here are some tips on how to make your own potato chips.

Use Russet Potatoes

The best potatoes for homemade chips are russet potatoes, which have less moisture than other varieties, helping them get crispy without getting overcooked.

Slice Thin

One of the most important parts of getting your potato chips crispy is slicing them as thinly as possible. Using a mandolin is your best bet to get thin, even slices.

Rinse Twice

Rinsing your potato slices to get off the extra starch is a crucial step that will help the potatoes from caramelizing and browning too much before they get crispy.

Dry Well

Whether you use a salad spinner or pat dry, getting your potato slices fully dry before frying is crucial to avoid too much oil splatter.

Fry in Hot Oil

To get your chips properly crispy, you’ll want to fry them in oil at a temperature of 350°F to 360°F.

Sometimes it can be difficult to get in all your servings of vegetables for the day. If you have a busy lifestyle that makes vegetables inconvenient, here is the solution: veggie chips.

Instead of snacking on potato chips or pretzels, make your own veggie chips. To make them, all you need to do is thinly slice a root vegetable, drizzle over olive oil, salt, and bake! The best way to get a thin and crispy veggie chip is by using a mandoline, and if you do not have one, use a very sharp knife to make the thinnest slices possible.

Here are some chip inspirations to get you started.

Rutabega

Also known as Swede in some places in the world, this vegetable is a cross between a cabbage and a turnip and is perfect for making chips. It is very high in vitamin C and has a sharp yet slightly sweet flavor.

Parnsip

Parsnips are a white root vegetable that is naturally sweet when roasted just like a carrot and are high in fiber. Snack on these and you will stay fuller longer guaranteed.

Yucca

Yucca is a root vegetable native to Latin America. Is pretty starchy so it holds up really well as a chip.

There can’t be a party without chips and dip. But, all the leftover chips and half-eaten bags will eventually go stale, and quickly at that. Before you throw them out, try using them in some of these recipes. Not only will it save you money, you won’t have to go to the grocery store for these not some common applications.

Recrisp

Tortilla chips are some of the easiest chips to be brought back to life. Put them in the oven and bake for just a few minutes, and the chips should come out crispy and almost like new.

Casserole

If you tried the method above and your chips are too far gone to be saved, there is still hope! Use the chips as a base for a Mexican inspired casserole and you’ll have a great crunchy base layer. Layer beans, vegetables, and top with cheese, and you have an amazing dish that can feed a crowd.

Breadcrumbs

The most effective and easiest way to utilize stale chips of all kinds is to make them into breadcrumbs by simply crushing them by hand or in a food processor. You can use them to top dished like macaroni and cheese, or incorporate them into meatballs or veggie burgers!
