  • 1 lb. white American cheese, cubed or shredded
  • 1/2 cup half-and-half
  • 1 (4 oz.) can diced green chiles, undrained
  • 2 tablespoons canned jalapeños, chopped (optional for extra heat)
  • 1 small tomato, finely diced
  • 1/4 cup cilantro, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste

Instructions:

  1. In a medium saucepan over low heat, combine the white American cheese and half-and-half. Stir continuously to prevent the cheese from sticking. 
  2. Once the cheese has mostly melted, stir in the diced green chiles and jalapeños (if using). Continue to cook and stir until the cheese is completely melted and the mixture is smooth.
  3. Add the garlic powder, onion powder, and a pinch of salt to the queso. Stir well.
  4. Just before serving, fold in the diced tomato and cilantro.

Prep The Tray

Preheat your oven to 425º and get out a large baking tray. Place nacho chips across the whole tray and dollop spoonfuls of mashed potatoes over them. Add turkey, cheddar, fontina, stuffing, and Brussels sprouts.

Bake

Place the baking tray into the oven and heat for about 10 minutes or until the nachos are toasted and the cheese is melted.

Finishing Touches

A good warm plate of nachos is just what you want during these winter days. From the abundant cheese to the crispy bite, your taste buds will certainly thank you time and time again. However, the same old bowl of nachos every week can get boring, no matter how tasty it is. Therefore, here are some alternative ways to mix up your nachos.

Mushroom Mix

Prepare your nachos as you normally would. Fill up a big bowl of tortilla chips, fill with cheese, and bake under the oven with red onion. Meanwhile, fry up a pan of chopped mushrooms with diced onion, lots of garlic, salt, pepper, and cheese. Once the nachos are ready, top them with the mushroom mix.

Hot Chicken Melt

Cover a cooked succulent chicken breast in a chili marinade with herbs and spices. Top with cheese. Bake the chicken breast in the oven until the skin is crispy. Then chop the spicy chicken up and top your nachos with it. Serve with salsa and guacamole.

Crispy Bacon

Fry up little pieces of smoked bacon with onion, garlic, cheese, and boiled potato. Top your nachos with it, and you’re done!

INGREDIENTS ¾ coconut milk 3 tbsp nutritional yeast 2 tbsp corn flour ½ cup cashews (soaked overnight) ½ tsp sea salt ¼ tsp garlic powder ½ tsp onion powder . DIRECTIONS 1. Toppings

  1. Cut up onions and bell peppers and saute them together until soft.
  2. Drain and rinse a can of black beans and cook them with cumin, paprika, garlic powder, chili powder, and oregano.
  3. Make a guacamole by mashing avocado, diced onions, diced tomatoes, and lime juice together.
  4. If you want to add a spicy kick, cut up some fresh or pickled jalapenos.

Cheese Sauce

  1. Sauté garlic in oil. Add in flour and stir to incorporate.
  2. Slowly add in non-dairy milk and whisk to get out as many lumps as possible.
  3. Transfer the mixture to a blender with nutritional yeast, salt, pepper, paprika, and a pinch of cayenne.

Assembly

  1. Put down a layer of tortilla chips, followed by half the toppings and half the cheese sauce.
  2. Put down another layer of chips and do the same thing. That way you will get a bite of everything every time.

  1. Begin the preparation of your nachos by spreading out the contents of one large bag of tortilla chips onto a baking sheet. Be sure to spread them out evenly, allowing for an even cook.
  2. Next, you’ll want to add some above toppings in a specific order. First, spread the beans on top of the chips. Next, you’ll want to put the cheese on top of the beans. 
  3. After that, we’ll move to the vegetables. Add them in whatever order you prefer, but be sure to spread them evenly on top of the nachos.
  4. Put inside of your oven, preheated at 350 degrees F, and bake for 10-15 minutes, or until the cheese has melted.
  5. Enjoy!

Nachos are one of those comfort foods that combines everything you always want; crunchy, cheesy, soft, and filling. You might think that because you are vegan you have to give up nachos, but that’s just not true! 🌱Nice Nachos!🌱 . So I made some nachos the other day for my parents and I🤗💚 With homemade vegan nacho cheese and sourcream!🧀💚🤤 . I also sprinkled some guac, pico de gallo and purple radish microgreens from @littlebigfarmscoza for extra colour and spice😋💜🥑 . 🧀Nacho Cheese🧀 – inspired @elavegan . INGREDIENTS ¾ coconut milk 3 tbsp nutritional yeast 2 tbsp corn flour ½ cup cashews (soaked overnight) ½ tsp sea salt ¼ tsp garlic powder ½ tsp onion powder . DIRECTIONS 1. Mix all the ingredients in a food processor until smooth. 2. Cook on stovetop until desired consistency. . 🥛Sour Cream🥛- recipe by @glutenfreeveganpantry . INGREDIENTS 1 tbsp nutritional yeast ½ cup cashews (soaked overnight) 1 tbsp lemon juice ¼ tsp sea salt ½ cup water . DIRECTIONS 1. Mix all the ingredients in a food processor for 5 – 7 min. 2. Taste and add lemon juice or salt if needed. . 🍅Picco de Gallo🍅 . INGREDIENTS 1 tomato ½ red onion 2 cloves garlic . DIRECTIONS 1. Chop ingredients and mix together. . 🌮Fried Beans🌮 . INGREDIENTS ½ an onion 1 or two garlic cloves 1 can red kidney beans (or any other) . DIRECTIONS 1. Chop onions and garlic and sauté until soft and fragrant. 2. Toppings

  1. Cut up onions and bell peppers and saute them together until soft.
  2. Drain and rinse a can of black beans and cook them with cumin, paprika, garlic powder, chili powder, and oregano.
  3. Make a guacamole by mashing avocado, diced onions, diced tomatoes, and lime juice together.
  4. If you want to add a spicy kick, cut up some fresh or pickled jalapenos.

Cheese Sauce

  1. Sauté garlic in oil. Add in flour and stir to incorporate.
  2. Slowly add in non-dairy milk and whisk to get out as many lumps as possible.
  3. Transfer the mixture to a blender with nutritional yeast, salt, pepper, paprika, and a pinch of cayenne.

Assembly

  1. Put down a layer of tortilla chips, followed by half the toppings and half the cheese sauce.
  2. Put down another layer of chips and do the same thing. That way you will get a bite of everything every time.
