Nachos are one of those comfort foods that combines everything you always want; crunchy, cheesy, soft, and filling. You might think that because you are vegan you have to give up nachos, but that’s just not true! Or if you’re someone who wants to cut out some animal products, doing it with these vegan nachos is a great place to start.
Toppings
- Cut up onions and bell peppers and saute them together until soft.
- Drain and rinse a can of black beans and cook them with cumin, paprika, garlic powder, chili powder, and oregano.
- Make a guacamole by mashing avocado, diced onions, diced tomatoes, and lime juice together.
- If you want to add a spicy kick, cut up some fresh or pickled jalapenos.
Cheese Sauce
- Sauté garlic in oil. Add in flour and stir to incorporate.
- Slowly add in non-dairy milk and whisk to get out as many lumps as possible.
- Transfer the mixture to a blender with nutritional yeast, salt, pepper, paprika, and a pinch of cayenne.
Assembly
- Put down a layer of tortilla chips, followed by half the toppings and half the cheese sauce.
- Put down another layer of chips and do the same thing. That way you will get a bite of everything every time.
