If you’re looking for a simple, healthy, and satisfying side dish to go with your main course, then this recipe just might be for you. This recipe puts a wholesome twist on roasted eggplant, and is a great addition to a festive meal. Keep reading for this delicious and tasty recipe.

Ingredients:

  • One whole eggplant
  • 1 C cold water
  • 1 C sesame paste
  • Juice of half a lemon
  • 1/2 tsp sumac
  • 1/2 tsp of sweet paprika
  • 1/2 tsp of zaatar
  • Salt and pepper to taste
  • Handful of pomegranate seeds for garnish (optional)
  • Bunch of finely chopped parsley for garnish (optiional)
  • Pine nuts for garnish (optional)

Instructions

  1. Cut your eggplant in half and then cut into fourths without slicing too thin
  2. Line a greased parchment paper on a cookie sheet
  3. Roast in the oven on 425 degrees until fork tender
  4. Scoop out the insides and pat dry
  5. Prepare your tahini by mixing equal parts sesame paste and cold water, mix until smooth and creamy, but not too thick
  6. Add lemon juice to the mix and drizzle over the eggplant
  7. Add spices on top of the eggplants, salt and pepper to taste, and add desired garnish when you’re ready to serve
  8. Serve with kebabs or enjoy on its own!

Who among us hasn’t bought a bag of spinach or fresh berries with the best of intentions, only to discover they’ve gone bad after just a few days? The short shelf life of these products means we essentially end up throwing money in the trash, and we’d probably be better off sticking with options that last longer post-purchase. If you can relate, read on to learn about some of the most shelf-stable produce. 

Root Veggies

Vegetables like carrots, potatoes, and beets have a low moisture content and natural protective layers that lend to a shelf life of anywhere from two weeks to several months. They typically keep longest in cool, dark environments with adequate ventilation, though it’s also essential to remove any leafy greens, as they draw moisture out of the roots and cause them to go bad more quickly. Stock up, then use them to make hearty soups and stews all winter long. 

Apples & Oranges

The truth about vegetables is that they get a bad rap. Since childhood, people tend to associate them with being that gross part of dinner that your parents force you to eat. But in reality, vegetables can be really delicious; it’s just all a matter of how you cook them. So if you want to steam your vegetables in a way that results in the best flavor and texture, here’s your guide. No more soggy and bland vegetables.

Step One

First, chop the veggies into uniform, relatively small pieces. That way, they’ll all cook at the same rate and it won’t take you ages to do so.

Step Two

Next, fill a pot with about one inch of water. Place a steamer basket over top of it and then bring the water to a full, rolling boil. Only once the water is boiling should you place your veggies in the steamer basket and cover with a lid. Cook until the vegetables come out just tender enough to pierce with a fork. Generally speaking, things like broccoli florets will take between three to five minutes while cauliflower can take from 10 to 12. Just test it as you go and you should be fine.

Step Three

Once it’s done, drain the vegetables and most importantly season them! Toss with olive oil or butter and salt. You can also add spices, lemon juice, or fresh herbs. This step is key, so don’t forget it.

The short shelf life of these products means we essentially end up throwing money in the trash, and we’d probably be better off sticking with options that last longer post-purchase. Root Veggies

Vegetables like carrots, potatoes, and beets have a low moisture content and natural protective layers that lend to a shelf life of anywhere from two weeks to several months. They typically keep longest in cool, dark environments with adequate ventilation, though it’s also essential to remove any leafy greens, as they draw moisture out of the roots and cause them to go bad more quickly. Stock up, then use them to make hearty soups and stews all winter long. 

Apples & Oranges

Shelf-stability is one criteria where it actually makes sense to compare apples and oranges. While they may not have much else in common, apples and citrus fruits can both remain fresh for up to two months when stored properly due to their thick skin and acidic pH, which acts as a natural preservative. Just leave them whole until you’re ready to enjoy, then cut into slices before serving.

Winter Squash

Unlike their more delicate summer counterparts, winter squash varieties like butternut and acorn have thick, waxy skins that protect the fleshy insides and help the vegetable to keep well for up to 4 months. To extend their shelf life as much as possible, store them in a cool, dry place outside of the refrigerator and away from bright light. We love making homemade butternut squash soup or roasting our winter squash with a drizzle of olive oil for a seasonal side dish.

The truth about vegetables is that they get a bad rap. Since childhood, people tend to associate them with being that gross part of dinner that your parents force you to eat. But in reality, vegetables can be really delicious; it’s just all a matter of how you cook them. So if you want to steam your vegetables in a way that results in the best flavor and texture, here’s your guide. No more soggy and bland vegetables.

Step One

First, chop the veggies into uniform, relatively small pieces. That way, they’ll all cook at the same rate and it won’t take you ages to do so.

Step Two

Next, fill a pot with about one inch of water. Place a steamer basket over top of it and then bring the water to a full, rolling boil. Only once the water is boiling should you place your veggies in the steamer basket and cover with a lid. Cook until the vegetables come out just tender enough to pierce with a fork. Generally speaking, things like broccoli florets will take between three to five minutes while cauliflower can take from 10 to 12. Just test it as you go and you should be fine.

Step Three

Once it’s done, drain the vegetables and most importantly season them! Toss with olive oil or butter and salt. You can also add spices, lemon juice, or fresh herbs. This step is key, so don’t forget it.
