Kottu Roti is a popular Sri Lankan street food known for its savory flavors and hearty texture. It’s a versatile dish made from chopped roti mixed with a delicious blend of spices, vegetables, and optional meats. Here’s a recipe to make this fantastic dish at home.
Ingredients:
- 4-6 store-bought or homemade roti (flatbreads), cut into strips
- 2 tablespoons vegetable oil
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1-2 green chilies, sliced (adjust to taste)
- 1 bell pepper, diced
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 1/2 cup cooked chicken, beef, or tofu (optional), diced
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 2 tablespoons Sri Lankan curry powder or garam masala
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions:
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the roti strips and stir-fry until they are slightly crispy but still soft. Remove from the skillet and set aside.
- In the same skillet, add 2 tablespoons of vegetable oil. Sauté the chopped onion until translucent, about 3 minutes. Add the minced garlic and green chilies, and cook for another minute. Stir in the bell pepper, carrot, and cabbage, and cook until the vegetables are tender-crisp, about 5 minutes.
- If using chicken, beef, or tofu, add it to the skillet and stir to combine. Cook for an additional 2-3 minutes to heat through. Push the vegetables and meat to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through, then mix them into the vegetable mixture.
- Add the cooked roti strips to the skillet. Stir in the soy sauce and curry powder or garam masala. Mix everything well until the roti is evenly coated with the spices and heated through. Season with salt and pepper to taste.
- Garnish with fresh cilantro or green onions. Serve hot as a satisfying meal or a flavorful side dish.
