Do you ever feel like your meals need that little something, a magic touch of extra flavor to set everything off and bring out the umami? If so, you’ll want to make plenty of this infused oil, which can be used to drizzle, dip and decant over pretty much anything you whip up in the kitchen. It’s super easy to make and will keep for six months in a sealed container. You can adjust the quantities of flavorings if you would prefer a more subtle oil.
Ingredients (to make 1 pint of flavored oil):
- 1 pint of oil of your choice – olive oil is expensive but effective, vegetable oils will also work
- 2 bulbs of garlic
- 1 dried chilli
- 3 sprigs of rosemary
- 1 teaspoon of garlic paste
- 1 teaspoon of miso paste
Instructions:
- Peel the garlic cloves.
- Place the garlic, chilli and rosemary in a large pan.
- Add the oil and slowly bring to a low heat.
- Let the oil warm for 15 – 20 minutes, watch it carefully and keep stirring to ensure the flavorings don’t burn.
- Remove from the heat and stir in the garlic and miso paste, stir throughly until well combined.
- Allow the oil to cool before decanting into a sealed container.
- Use the oil whenever you want to add some garlicky goodness to your meals!
