This Vegan Granola Recipe Will Be Your New Go-To Breakfast

There are a lot of misconceptions about granola; although seemingly healthy, it can hide a lot of ingredients that you would be surprised to find. Some granolas have a ton of sugar, some are drenched in oil, and some even have egg whites in them which means it is not always vegan. But now, you can use this recipe for your all your granola needs, knowing it is healthier, vegan, but still totally delicious. Give it a try next time you meal prep!

Ingredients

One of the best parts of this recipe is that it is totally customizable. The only main ingredients you need to have is aquafaba, which is the liquid inside a can of chickpeas, and oats. You can also add coconut, nuts, or chia seeds to boost the flavor and up your protein intake, and maple syrup or a bit of coconut sugar to add sweetness.

Method

  1. Cobine all your dry ingredients in a bowl and mix well.
  2. Beat the aquafaba until it becomes white and glossy, like meringue.
  3. Add maple syrup and vanilla and continue to beat.
  4. Add to the dry ingredients and mix well.
  5. Bake in the oven for about 15 minutes and you’re ready to eat!
