If you ever need a fast dinner recipe, we have one for you. The 25-minute buffalo chicken enchiladas are not only tasty, but also very easy to make. The prep only takes 15 minutes, which means you can whip out a whole meal so fast. You’ll be surprised how much your family will love it.
Ingredients
The ingredient list includes:
10 oz enchilada sauce, warmed
12 corn tortillas
3 cups shredded rotisserie chicken
1 1/4 cups shredded Monterey Jack cheese
1/4 cup buffalo wing sauce
1/2 cup blue cheese dressing
1/4 teaspoon chili powder
1/4 cup 2% milk
10-3/4 oz condensed cream of celery soup, undiluted
Instructions
Combine the chicken, buffalo wing sauce and the enchilada sauce in a bowl. Include 3/4 cup cheese.
In the meantime set the oven to 350 F degrees.
Place the tortillas in a baking dish, then fill each one with 1/4 cup chicken mixture.
In another bowl combine the milk, blue cheese sauce, and the soup, then top the enchiladas off with this mixture. Pour the remaining cheese and some chili powder as well.
Put the baking dish in the oven and cook the buffalo chicken enchiladas for half an hour.
Serve them with your favorite dips such as sour cream, extra buffalo sauce, blue cheese and more.
