Wednesday: Soda Bagels, soda bread made in a bagel shape ?? with all the classics, smoked salmon, cream cheese, capers, onion, lemon and some beautiful French breakfast radish. I like the combination of the typically Jewish and Irish which immediately makes me think of NYC ? Not only does soda bread take considerably less time, but putting a hole in the middle eliminates the risk of having a raw centre too, plus I love the taste. Recipe below ⏬⏬⏬ – – – – – – – – – – – – – – – – – – – 250g flour (I used regular plain flour) 50g oats (with extra for garnish) 1 tsp salt 1 tsp black pepper 1/2 tsp bicarb of soda 1 tsp baking powder 2 tbsp honey or treacle or I used Dutch stroop 300ml buttermilk or 300ml milk with 2 tbsp lemon juice 1 egg – – – – – – – – – – – – – – – – 1 – Oven to 180c, prepare a tray with baking paper 2 – Combine all the dry ingredients 3 – Separate bowl or jug, combine all the wet and add to the dry 4 – Mix together being careful not to over stir, the mix should be wet(ish) 5 – Cut the dough into four equal pieces, it’s easier to handle with wet hands. Place on the tray with room to grow and use your finger to poke a hole in the middle. Stretch it out a bit like a bagel 6 – Garnish with oats and maybe a sprinkle of salt too 7 – Bake for 25 minutes but check at 20 8 – Leave to cool for 5 minutes before slicing open and serve ?????? #symmetrybreakfast
