How to Make the Best Rice and Beans

Rice and beans is a staple dish, especially if you’re on a budget and trying to eat something that is filling and nutritious on top of being cheap. Some may look down on it as a simple, boring food, but it’s actually really easy to jazz up into something fantastic. Here’s how to make the most out of rice and beans.

(Notice that the key here is to add lots of flavor in the form of seasoning and vegetable broth. Beyond that, it’s just a matter of cooking things completely)

Ingredients

  • Kidney beans
  • Vegetable broth
  • Diced red onion
  • Diced green pepper
  • Chopped tomato
  • Minced garlic
  • Vegetable oil
  • Paprika
  • Cumin
  • Black pepper
  • Rice
  • Salt
  • Cilantro

Instructions

  • Heat vegetable oil over medium heat
  • Add onion, bell pepper, tomato, and garlic. Saute until everything is soft and fragrant, about five minutes
  • Add one cup of vegetable broth, paprika, cumin, and black pepper
  • Simmer for another five minutes, stirring occasionally to combine the flavors
  • Add beans and more vegetable broth
  • Cook for 20 minutes
  • While beans are cooking, cook your choice of white or brown rice on the side according to package instructions
  • When it’s done cooking, fluff the rice and fold into the cooked beans
  • Serve garnished with cilantro on top
