You Can Make Delicious Broccoli Fritters in No Time

Michigan-based blogger Yumna aka Feel Good Foodie shared this simple recipe, that’s perfect for everyone who wants a quick and healthy meal. Her broccoli fritters are easy to prep, require no special equipment, and you can make them with basic ingredients, that you probably have at home.

Ingredients:

  • 1 broccoli head cut into florets
  • 1 large egg
  • 3 tablespoons minced onions
  • 2 garlic cloves pressed
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons flour optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon oregano
  • 2 tablespoons avocado oil for frying

Instructions:

  1. Blend the broccoli in a food processor or chop it with a knife until it’s the size of fine couscous.
  2. Combine the broccoli with egg, onions, garlic, cheese, flour (optional) and seasoning in a large bowl, and stir the mixture until it’s well combined.
  3. Use the mixture to make patties – you should get about six 1/2-inch thick patties, approximately 4 inches wide.
  4. Put olive oil inside a large skillet and heat it up on medium-high heat. Fry the fritters in batches of three, for about 10 minutes or until crispy.
  5. Place the fritters on a plate lined with a paper towel and cover them until you’re done frying the second batch.
  6. The fritters should be served warm with your favorite dipping sauce, but you can also store them in the freezer for up to five days.
