Rich, fluffy, and loaded with chocolate, they’re everything a chocolate lover could ask for. Here’s how you can make them at home.

Ingredients:
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder, sifted
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup soda water or cola (for added fluffiness)
- 2 cups mixed chocolate chunks (milk and dark)
For the Ganache:
- 1/2 cup heavy cream
- 1 cup dark chocolate chips

Instructions:
- Preheat your oven to 350°F. Prepare a muffin tin with large liners or make your own with parchment squares as described above.
- In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk together oil, sugar, eggs, and vanilla until smooth. Stir in buttermilk and soda water or cola until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chunks, reserving a few for topping.
- Divide the batter among the prepared muffin tins, filling each about three-quarters full. Sprinkle the reserved chocolate chunks on top.
- Place in the oven and bake for about 25-30 minutes, or until a toothpick comes out clean.
- While the muffins are baking, heat the cream in a small saucepan until it just begins to simmer. Remove from heat and add the chocolate chips, letting sit for a few minutes. Stir until smooth.
- Once the muffins are baked and slightly cooled, use a small spoon or knife to make a hole in the center of each muffin. Fill with the chocolate ganache.
