Using Overripe Eggplants
Overripe eggplants are bitter and have a tougher texture that doesn’t go away even if you cook it properly. You’ll recognize them by squishy texture and dark spots on the skin. Ripe eggplants, on the other hand, have glossy skin and have a firm texture that slightly gives when pressed.
Using Too Much Oil
Eggplants are notorious for absorbing oil, meaning you need to avoid using too much. If you go overboard, the eggplant will become a greasy mess.
Failing to Give Them Room to Breathe
Regardless of whether you are frying eggplants in a pan or roasting them in an oven, you need to give each slice some room to breathe. This will ensure they have enough space to release the moisture inside of them and be cooked to perfection. When crowded, they fail to get caramelized on the outside and don’t taste as good.
Going Overboard with Sauce or Cheese
You might think that you are improving eggplant by drenching it in sauce or covering it in loads of cheese. However, this will make them mushy and mask their flavor. Instead, be moderate and pack it with more flavors using light seasoning.
