Try This Super Satisfying Porridge for Breakfast

Porridge is seen by many as a healthy and practical start to the day. Oats are a great choice for breakfast and are a popular choice. But porridge doesn’t have to be plain and boring, and it’s the perfect meal for adding some delicious but healthy toppings to keep you fuller longer and turn your breakfast into a treat. Here’s an idea for a satisfying porridge meal.

Ingredients:

(Serves 2)

  • 1 cup porridge oats
  • 2 cups water/milk
  • Salt 
  • 8 pitted dried dates
  • 1 large banana
  • 1 apple 
  • 1 tablespoon smooth natural peanut butter
  • Handful red grapes
  • Handful pecans 
  • Handful flaked almonds
  • Greek yogurt
  • 1 tablespoon honey

Instructions:

  1. Chop the dates in half.
  2. Peel and core the apple and then chop it into bite-sized chunks.
  3. Add the porridge oats to a large pot and then add the water or milk (depending on your preference).
  4. Place on a medium heat and add a sprinkle of sea salt.
  5. Add the dates and the apple and stir frequently until the porridge starts to thicken.
  6. Peel and chop the banana and then add it to the pan.
  7. Continue to heat and stir for another 5 or so minutes until it’s reached your desired consistency.
  8. Remove from the heat and add the peanut butter and grapes, stirring until mixed through.
  9. Divide into 2 bowls and dollop on some Greek yogurt, drizzle with the honey, and then sprinkle the pecans and almonds over.
