Custard is a delicious and versatile option when you’re thinking of desserts. Simply pair with with some delicious ripe fruit, or use to top off a stunning cake or steamed pudding. Although making custard can be a bit fiddly, it’s definitely worth it for the taste and for the gasps of surprise and delight from your guests as they start dessert.
Ingredients (to serve 4):
- 1 cup of cream
- 3 cups of whole milk
- 4 large egg yolks
- 3 tablespoons of cornflour
- 1/2 cup of caster sugar
- 1 teaspoon of vanilla extract
Instructions:
- Put the cream and milk into a large pan, bring to just below boiling point.
- In a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.
- Clean the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon. You want the custard to thicken without any lumps, this should take around 7 minutes.
- Serve hot or cold.
Perfect with a variety of dishes, or even just eaten by itself, homemade custard is winner every time.
