How to Make Delicious Vanilla Custard

Custard is a delicious and versatile option when you’re thinking of desserts. Simply pair with with some delicious ripe fruit, or use to top off a stunning cake or steamed pudding. Although making custard can be a bit fiddly, it’s definitely worth it for the taste and for the gasps of surprise and delight from your guests as they start dessert.

Ingredients (to serve 4):

  • 1 cup of cream
  • 3 cups of whole milk
  • 4 large egg yolks
  • 3 tablespoons of cornflour
  • 1/2 cup of caster sugar
  • 1 teaspoon of vanilla extract

Instructions:

  1. Put the cream and milk into a large pan, bring to just below boiling point.
  2. In a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.
  3. Clean the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon. You want the custard to thicken without any lumps, this should take around 7 minutes.
  4. Serve hot or cold.

Perfect with a variety of dishes, or even just eaten by itself, homemade custard is winner every time.
