Ingredients

  • 4 eggs
  • 3 medium tomatoes
  • 1 tablespoon of olive oil
  • 4oz of feta cheese
  • Salt

Instructions

  1. Heat your oil in a pan that you would normally use to make scrambled eggs. Grate your tomatoes into the pan. This will ensure you get the maximum flavor and best texture, and grating tomatoes is a good technique for tomatoe sauces generally.
