Ingredients

The only mandatory ingredients for this dessert is condensed milk, butter or margarine, and cocoa powder. If you want to roll the truffles and give them a little pizzaz, you can use more cocoa powder, chocolate sprinkles, or even shredded coconut.

Method

  1. Melt the butter in the pan
  2. Add in the condensed milk and cocoa powder
  3. Stir continuously with a wooden spoon on medium heat until you see the bottom of the pan when you stir it. Do not walk away from this or it will burn!
  4. Pour into a greased pan and let it cool to room temperature
  5. Then, grease your hands so the mixture doesn’t stick, take a small bit and roll it into a ball slightly smaller than a golf ball
  6. Roll them in your toppings or eat straight away! Keep the rest in your refrigerator for up to two weeks.

Whether you’re hosting a party or you just want to make some fun and healthy snacks, these vegan cucumber rolls are just what you want. Not only are you getting nutrients from the cucumber as the vehicle, but they look so pretty you’ll hardly be able to keep your hands off of them!

Whether you’re hosting a party or you just want to make some fun and healthy snacks, these vegan cucumber rolls are just what you want. Not only are you getting nutrients from the cucumber as the vehicle, but they look so pretty you’ll hardly be able to keep your hands off of them!

Ingredients:

  • 2 large cucumbers or 3 smaller ones
  • 3-4 tablespoons of your favorite spread like hummus, tahini, mashed avocado
  • 1/8 cup of sprouts, watercress, or arugula, optional

Instructions:

  1. First, wash but don’t peel the cucumbers! Keeping the skin on will help with the roll and it will make it look very professional.
  2. Cut off each of the ends on both of the cucumbers. Then, using either a wide peeler or a mandoline, make wide, but thin strips from the cucumbers.
  3. Lay the strips out flat and blot them with a paper towel to get rid of some of the excess water.
  4. Then, take a very small amount of whatever spread you want and put it down the strip.
  5. Put down any greens if you’re deciding to use them and then roll up the pieces into pinwheels!
  6. Secure with a toothpick to make serving and eating easier and you’re done.

Blondies are the cousins of brownies—different but just as delicious. By using brown sugar, you give these super decadent treats a really rich taste. So, if you are lactose intolerant or just want to cut down on your dairy intake, this is the recipe for you!

Ingredients

This recipe actually only has a few basic ingredients:
1/2 cup of neutral oil
1 1/3 cups of packed brown sugar
2 eggs
a teaspoon of almond or vanilla extract
a pinch of salt
1 teaspoon of baking powder
1 1/2 cups of all-purpose flour

You can also add in pieces of dark chocolate if you want.

Instructions

  1. Start by mixing together the oil and brown sugar in a bowl until there are no lumps.
  2. Then, crack in one egg at a time and mix to combine before adding the other.
  3. Pour in the vanilla or almond and stir well again.
  4. Put in all the dry ingredients into the same bowl and mix gently, just until all the ingredients have incorporated.
  5. Sprinkle in the chocolate if you’re using it, and then mix one more time.
  6. Then, grease a baking dish and pour in the batter.
  7. Bake at 350 F for 30 minutes until a toothpick comes out clean.
  8. Wait 10 minutes to cool before you slice into it, and then enjoy!

If you’re not into sweet breakfasts, this savory one inspired by Middle Eastern classics is perfect for you! It’s healthy, full of vegetables, and simply delicious.

Ingredients

  • Bread of your choice
  • 2 eggs
  • 2 Persian cucumbers
  • 2 radishes 
  • 1 tomato
  • 1/2 bell pepper
  • 1/2 cup of tahini
  • 1/4 cup of lemon juice
  • 2-4 tablespoons of water
  • 1 minced clove of garlic
  • Parsley to garnish
  • Salt and pepper to taste

Instruction

  1. First, prepare the eggs any way you like. You can hard boil, soft boil, fry, or do whatever you please.
  2. Chop up the cucumbers, radishes, tomato, and bell pepper into a fine dice. Try to make each ingredient that same size, put them into a bowl, and season them lightly with salt and pepper.
  3.  Then, combine the tahini, lemon juice, water, and garlic into a medium-sized bowl. Mix until it’s thinned out but thick enough to use as a dip and a dressing. If you need to thin it more, use more water. Season with salt and pepper to your taste. 
  4. To assemble, put the salad on the plate with the eggs and bread. Drizzle the tahini sauce all over the plate and save some on the side to dip as well. 
  5. Tear up some leaves of parsley and put the over the top as well, and enjoy!

Red velvet cake is such a delicious treat but if you want to be able to give a little bit to everyone, make them into cookies!

Ingredients

  • 2 1/4 cups of flour
  • 1/3 cup of cocoa powder
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of softened unsalted butter
  • 2 oz of softened cream cheese
  • 1 1/2 cups of sugar
  • 2 large eggs
  • 1 1/2 to 2 teaspoons of red food dye 
  • 1 teaspoon of vanilla extract
  • 1/2 cup of powdered sugar

Recipe

  1. Pour the flour, cocoa powder, baking powder, and salt into a bowl and mix to combine. 
  2. Put the butter and cream cheese into the bowl of a stand mixer or a regular bowl using an electric hand mixer. Mix to combine. 
  3. Add in the sugar and cream everything for 1-2 minutes. 
  4. Crack in the egg, the food dye, and the vanilla extract and mix again. 
  5. Add half the dry ingredients and mix with a rubber spatula, and then add in the other half once everything is incorporated. 
  6. Chill the dough for 4 hours before using. 
  7. Use a small ice cream scoop to make balls out of the dough, roll each ball in powdered sugar, and place them on a parchment-lined baking sheet. 
  8. Bake at 350 F for 9-10 minutes, cool on a cooling rack, and enjoy!

There are so many options for the type of eggs to buy, that it can get extremely overwhelming knowing which egg is right for you. There’s cage-free, free-range, organic, pasture-raised – what’s the best option? If the egg aisle is giving you a headache with all the terminology, this is the guide for you. 

Cage-Free

What this term means is that the chickens are not in cages, which is the worst scenario for a chicken. However, this doesn’t mean they’re running around happily. They are still most likely in a dark and crowded barn or building where they are not exposed to light or the great outdoors, but since they aren’t in cages, companies are free to use this term for marketing. 

Free Range

Again, this term is more of a marketing scheme than it leads to believe. While these kinds of eggs come from chickens who have not been in cages, they aren’t roaming free on a pasture all day long. Rather, they are allowed to be outside for a certain amount of time in their life, but it’s usually minimal. 

Organic

This relates to the type of feed the chickens are given, and with organic eggs comes organic feed. This isn’t telling about the conditions of the chickens, but you do know that what they are eating is organic and free of antibiotics, which means you aren’t ingesting anything unhealthy in that way.

If you’re following a low-carb diet, this is the perfect dish for you. This creamy pesto chicken provides all the flavor you need but with almost no carbs, so dig in!

Ingredients :

  • 1 pound of boneless skinless chicken breasts
  • 2 1/2 tablespoons of pesto
  • 2 tablespoons of olive oil
  • 2 cups of cherry tomatoes  
  • 1 tablespoon of flour
  • 2 cloves of minced garlic
  • 1 cup of evaporated milk
  • Salt and pepper to taste 

Instructions:

  1. Pat the chicken breasts dry, and then season them with salt and pepper to your taste and cover them with 2 tablespoons of pesto. 
  2. Heat up a large non-stick skillet over medium heat, add in the oil, and once it’s ready, put in the chicken breasts. 
  3. Cook for 4-5 minutes on each side so they’re browned but not cooked all the way through. 
  4. In a medium-sized bowl, whisk together the flour, garlic, pesto, milk, and salt and pepper to your taste. 
  5. Put the chicken to the side for later.
  6. Put the cherry tomatoes into the skillet and cook for 1-2 minutes. 
  7. Add in the sauce and bring it to a boil before putting the chicken back into it to absorb the flavors. 
  8. Cook it for a few more minutes or until the internal temperature is 165 F. 
  9. Enjoy!

Blondies are the cousins of brownies—different but just as delicious. By using brown sugar, you give these super decadent treats a really rich taste. So, if you are lactose intolerant or just want to cut down on your dairy intake, this is the recipe for you!

Ingredients

This recipe actually only has a few basic ingredients:
1/2 cup of neutral oil
1 1/3 cups of packed brown sugar
2 eggs
a teaspoon of almond or vanilla extract
a pinch of salt
1 teaspoon of baking powder
1 1/2 cups of all-purpose flour

You can also add in pieces of dark chocolate if you want.

Instructions

  1. Start by mixing together the oil and brown sugar in a bowl until there are no lumps.
  2. Then, crack in one egg at a time and mix to combine before adding the other.
  3. Pour in the vanilla or almond and stir well again.
  4. Put in all the dry ingredients into the same bowl and mix gently, just until all the ingredients have incorporated.
  5. Sprinkle in the chocolate if you’re using it, and then mix one more time.
  6. Then, grease a baking dish and pour in the batter.
  7. Bake at 350 F for 30 minutes until a toothpick comes out clean.
  8. Wait 10 minutes to cool before you slice into it, and then enjoy!

How to prepare it:

The way to prepare the stalk is simple. First, start off by cutting the end of the stalk. Then, smash the entire stalk with a hard wooden spoon, a rolling pin, or anything hard. This will break the stalks up just enough to release the juices. Then, cut them in the bias, or diagonally.

When to use:

Lemongrass is a key ingredient in many dishes. Some of the more famous ones include tom yum soup, larb, green curry paste, and more. Adding lemongrass to your dishes will give you slight citrus notes, and a boost of all around freshness. You can also boil it with just water to make tea, which is said to be very healing as well as delicious.

If you’re not into sweet breakfasts, this savory one inspired by Middle Eastern classics is perfect for you! It’s healthy, full of vegetables, and simply delicious.

Ingredients

  • Bread of your choice
  • 2 eggs
  • 2 Persian cucumbers
  • 2 radishes 
  • 1 tomato
  • 1/2 bell pepper
  • 1/2 cup of tahini
  • 1/4 cup of lemon juice
  • 2-4 tablespoons of water
  • 1 minced clove of garlic
  • Parsley to garnish
  • Salt and pepper to taste

Instruction

  1. First, prepare the eggs any way you like. You can hard boil, soft boil, fry, or do whatever you please.
  2. Chop up the cucumbers, radishes, tomato, and bell pepper into a fine dice. Try to make each ingredient that same size, put them into a bowl, and season them lightly with salt and pepper.
  3.  Then, combine the tahini, lemon juice, water, and garlic into a medium-sized bowl. Mix until it’s thinned out but thick enough to use as a dip and a dressing. If you need to thin it more, use more water. Season with salt and pepper to your taste. 
  4. To assemble, put the salad on the plate with the eggs and bread. Drizzle the tahini sauce all over the plate and save some on the side to dip as well. 
  5. Tear up some leaves of parsley and put the over the top as well, and enjoy!

Red velvet cake is such a delicious treat but if you want to be able to give a little bit to everyone, make them into cookies!

Ingredients

  • 2 1/4 cups of flour
  • 1/3 cup of cocoa powder
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of softened unsalted butter
  • 2 oz of softened cream cheese
  • 1 1/2 cups of sugar
  • 2 large eggs
  • 1 1/2 to 2 teaspoons of red food dye 
  • 1 teaspoon of vanilla extract
  • 1/2 cup of powdered sugar

Recipe

  1. Pour the flour, cocoa powder, baking powder, and salt into a bowl and mix to combine. 
  2. Put the butter and cream cheese into the bowl of a stand mixer or a regular bowl using an electric hand mixer. Mix to combine. 
  3. Add in the sugar and cream everything for 1-2 minutes. 
  4. Crack in the egg, the food dye, and the vanilla extract and mix again. 
  5. Add half the dry ingredients and mix with a rubber spatula, and then add in the other half once everything is incorporated. 
  6. Chill the dough for 4 hours before using. 
  7. Use a small ice cream scoop to make balls out of the dough, roll each ball in powdered sugar, and place them on a parchment-lined baking sheet. 
  8. Bake at 350 F for 9-10 minutes, cool on a cooling rack, and enjoy!

There are so many options for the type of eggs to buy, that it can get extremely overwhelming knowing which egg is right for you. There’s cage-free, free-range, organic, pasture-raised – what’s the best option? If the egg aisle is giving you a headache with all the terminology, this is the guide for you. 

Cage-Free

What this term means is that the chickens are not in cages, which is the worst scenario for a chicken. However, this doesn’t mean they’re running around happily. They are still most likely in a dark and crowded barn or building where they are not exposed to light or the great outdoors, but since they aren’t in cages, companies are free to use this term for marketing. 

Free Range

Again, this term is more of a marketing scheme than it leads to believe. While these kinds of eggs come from chickens who have not been in cages, they aren’t roaming free on a pasture all day long. Rather, they are allowed to be outside for a certain amount of time in their life, but it’s usually minimal. 

Organic

This relates to the type of feed the chickens are given, and with organic eggs comes organic feed. This isn’t telling about the conditions of the chickens, but you do know that what they are eating is organic and free of antibiotics, which means you aren’t ingesting anything unhealthy in that way.

If you’re following a low-carb diet, this is the perfect dish for you. This creamy pesto chicken provides all the flavor you need but with almost no carbs, so dig in!

Ingredients :

  • 1 pound of boneless skinless chicken breasts
  • 2 1/2 tablespoons of pesto
  • 2 tablespoons of olive oil
  • 2 cups of cherry tomatoes  
  • 1 tablespoon of flour
  • 2 cloves of minced garlic
  • 1 cup of evaporated milk
  • Salt and pepper to taste 

Instructions:

  1. Pat the chicken breasts dry, and then season them with salt and pepper to your taste and cover them with 2 tablespoons of pesto. 
  2. Heat up a large non-stick skillet over medium heat, add in the oil, and once it’s ready, put in the chicken breasts. 
  3. Cook for 4-5 minutes on each side so they’re browned but not cooked all the way through. 
  4. In a medium-sized bowl, whisk together the flour, garlic, pesto, milk, and salt and pepper to your taste. 
  5. Put the chicken to the side for later.
  6. Put the cherry tomatoes into the skillet and cook for 1-2 minutes. 
  7. Add in the sauce and bring it to a boil before putting the chicken back into it to absorb the flavors. 
  8. Cook it for a few more minutes or until the internal temperature is 165 F. 
  9. Enjoy!
