Bake This Orange Polenta Cake for Someone to Make Their Day

If you’ve never tried a polenta cake before, you’re in for a treat! The texture and flavor of a polenta cake are so savory, and when combined with a sharp citrus fruit such as an orange, it creates a wonderfully tasty cake. Here’s a recipe for how to make a great orange polenta cake that will make someone’s day.

Ingredients

  • 1 cup of unsalted butter
  • 4 large eggs
  • 1 cup of granulated sugar
  • 1 cup of polenta
  • 2 cups of plain flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 3 oranges
  • 1 teaspoon of vanilla extract
  • 1 cup of icing sugar

Instructions

  1. In a large mixing bowl, cream your softened butter and sugar together until you have a light and fluffy mixture. Add the eggs one at a time, beating them as you add them.
  2. In a separate bowl, whisk together your polenta and flour with your baking powder and a pinch of salt. Then, slowly add your dry ingredients to the wet ingredients and mixing until combined. Stir in the orange zest of two oranges and the juice of one orange and add your vanilla extract.
  3. Pour your batter into a cake tin and leve the top of it. Bake at 350F for about 40 minutes.
  4. Meanwhile, in a small saucepan, heat the orange juice of two oranges and 1/4 cup of sugar over medium heat until the sugar dissolves. Once your cake is baked, poke holes on the surface with a toothpick or skewer and pour your syrup over the warm cake.
  5. In a bowl, mix your icing sugar with the juice of one orange until you have a smooth glaze. Drizzle it over your cake once it has cooled.
