Get Familiar with Caviar

It is important to know the basics of caviar. The only fish roe that is considered caviar is the one that comes from sturgeon fishes. The best ones come from beluga, ossetra, and sevruga, and each of them has certain differences that affect the taste.

Know the Grading

Caviar is usually graded as Grade 1 caviar and Grade 2. The Grade 1 is caviar that features big glossy eggs in perfect shape. Grade 2 caviar features eggs with more imperfections, although it doesn’t have to mean they are significantly worse in taste.
