Ingredients:

  • 1 large head Cauliflower
  • 1 tablespoon olive oil
  • 1 small shallot
  • 1 clove garlic
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • salt
  • freshly ground black pepper
  • 1 lime juice and zest
  • 1/4 cup cilantro
  • 1/4 cup chopped peanuts
  • 1/2 teaspoon red pepper flakes

Instructions:

  1. Heat your grill to medium and while you wait, cut the cauliflower into steaks. Baste olive oil over all sides of the cauliflower steaks and season with salt and pepper.
  2. Grill each “steak” for 8 minutes per side until charred.
  3. In a small bowl, add cilantro, garlic, sugar, lime juice and zest, red pepper flakes, shallot, and fish sauce.
  4. Place the grilled cauliflower on a platter and drizzle in the sauce before serving.

Remember the good old days when the biggest decision was choosing between playing outside until dusk or sneaking one more spoonful of grandma’s banana pudding? Well, we’ve got a recipe that will whisk you right back to those carefree childhood moments. Let’s recreate the magic with a classic banana pudding that’s as easy to make as it is delicious.

Ingredients:

  • 4 cups of whole milk
  • 1 cup of granulated sugar
  • 1/3 cup all-purpose flour
  • A pinch of salt
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 box of vanilla wafers
  • 5-6 ripe bananas, sliced
  • Optional: Whipped cream for topping

Instructions:

  1. In a saucepan, mix sugar, flour, and salt. Gradually add milk over medium heat, stirring continuously until the mixture boils and thickens. Boil for 1 minute, then remove from heat. 
  2. In a separate bowl, lightly beat the eggs. Temper the eggs by slowly adding a small amount of the hot mixture, stirring constantly.

Ingredients:

  • 8 ounces of rice noodles (pad Thai noodles)
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar or brown sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 8 ounces of shrimp, chicken, or tofu, cut into bite-sized pieces
  • 2 eggs, lightly beaten
  • 2 cups of bean sprouts
  • 4 green onions, chopped
  • 1/4 cup of chopped roasted peanuts
  • Lime wedges, for serving
  • Optional garnishes: chopped cilantro, sliced red chili, additional peanuts

Instructions:

  1. Cook the rice noodles according to the package instructions until they are tender but still slightly firm (al dente). Drain the noodles and rinse them under cold water to stop the cooking process. Set aside. In a small bowl, whisk together the tamarind paste, fish sauce, and palm sugar until well combined. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the shrimp, chicken, or tofu to the skillet and cook until they are cooked through and slightly golden brown, about 3-4 minutes.
  3. Push the protein to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through, then mix them with the protein. Add the cooked rice noodles to the skillet along with the prepared tamarind sauce. Toss everything together until the noodles are well coated in the sauce.
  4. Add the bean sprouts and chopped green onions to the skillet and toss to combine. Cook for an additional 1-2 minutes until the bean sprouts are slightly wilted. Remove the skillet from the heat and sprinkle the chopped roasted peanuts over the pad Thai. Serve it hot, garnished with lime wedges and optional garnishes such as chopped cilantro, sliced red chili, and additional peanuts.

  • 1/4 cup maple syrup
  • 1 red apple

Instructions:

Vegetarian alternatives can be a bit dull. So often at barbeques, the offering may be a bean burger or a fake meat burger made from soya. While these can be super tasty, it does get boring after a while. This recipe uses portobello mushrooms as a burger patty for a super succulent and rich flavor and topped with halloumi for even more deliciousness and some extra protein. This recipe is for four burgers. 

Ingredients:

  • 4 large portobello mushrooms
  • 5 ounces halloumi
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon extra virgin olive oil
  • 1 small red onion 
  • 1 large beef tomato
  • 4 iceberg lettuce leaves
  • 4 tablespoons mayonnaise
  • 1 cloves garlic
  • 4 burger buns

Instructions:

  1. Place the mayonnaise in a bowl and crush the garlic clove into it. Mix well then set aside.
  2. Finely slice the onion into rings and the tomato into discs. 
  3. Remove the stalks from the mushrooms and brush clean. Drizzle each mushroom with the extra virgin olive oil and sprinkle with some salt, pepper, and thyme. 
  4. Use your hands to rub the seasoning in, and then place the mushrooms under a grill on a medium heat, cooking for 5-10 minutes on each side.
  5. Meanwhile, slice the halloumi into 4 and place into an oiled pan. Gently fry for a few minutes on each side, until golden brown. 
  6. Slice each burger bun in half and dollop some garlic mayonnaise on each side. Add a lettuce leaf, a slice of tomato, and some onion.
  7. Place each mushroom into a burger bun and top with a slice of halloumi and the top of the bun, ready to serve.

This recipe for chicken soup includes bell peppers and sweet corn for a lovely mixture of flavors and textures, and it’s perfect to make in advance to have ready-to-go lunches all week, or for an easy and satisfying lunch at home. Recipe serves 4.

Ingredients:

  • 4 chicken breasts
  • 1 large white onion
  • 1 carrot
  • 1 stick of celery
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cans of sweet corn
  • 2 cups chicken stock
  • ¼ cup creme fraiche
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon smoked paprika
  • ½ tablespoon dried thyme
  • ½ tablespoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onion, carrot, celery, garlic, and bell peppers. 
  2. Chop each chicken breast into bite-sized pieces.
  3. Heat some oil in a large pot and add the chicken, cooking until no pink skin remains.
  4. Add the onion, carrot, and celery, season with salt and pepper, and cook for 10-15 minutes, stirring occasionally.
  5. Add the bell peppers, garlic, sweet corn, paprika, thyme, and oregano. Cook for another 10-15 minutes. 
  6. Add the chicken stock, creme fraiche, and cider vinegar. Increase the heat and leave to simmer for 15-20 minutes, stirring occasionally.
  7. Serve hot with crusty bread.

  • 2 cans of jackfruit
  • 1 can of chopped tomatoes

  • 1 tablespoon cinnamon

  • 2 tablespoons balsamic vinegar

Instructions:

  • Add the cumin, cinnamon, paprika, garlic powder, salt, and pepper and cook for a further 5 minutes.
  • Drain the jackfruit and add it to the pan along with the chopped tomatoes, balsamic vinegar, hot sauce, and barbeque sauce. Add a splash of water and leave to simmer for 30-40 minutes, stirring occasionally.
  • Remove from the heat and use a fork to break the jackfruit up.
  • Slice the burger buns in half. Dollop a quarter of the mixture onto each one and top with vegan coleslaw.

  • 12 ounces of pasta (spaghetti or penne work well)
  • 1 can of tuna in olive oil, drained

  • 2 cloves garlic, minced
  • 1 can of diced tomatoes
  • 1/4 cup of white wine (optional)

Well, we’ve got a recipe that will whisk you right back to those carefree childhood moments. Let’s recreate the magic with a classic banana pudding that’s as easy to make as it is delicious.

Ingredients:

  • 4 cups of whole milk
  • 1 cup of granulated sugar
  • 1/3 cup all-purpose flour
  • A pinch of salt
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 box of vanilla wafers
  • 5-6 ripe bananas, sliced
  • Optional: Whipped cream for topping

Instructions:

  1. In a saucepan, mix sugar, flour, and salt. Gradually add milk over medium heat, stirring continuously until the mixture boils and thickens. Boil for 1 minute, then remove from heat. 
  2. In a separate bowl, lightly beat the eggs. Temper the eggs by slowly adding a small amount of the hot mixture, stirring constantly. 
  3. Return all the mixture to the saucepan and cook on low heat until it thickens enough to coat a spoon, then stir in vanilla extract.

Ingredients:

  • 8 ounces of rice noodles (pad Thai noodles)
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar or brown sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 8 ounces of shrimp, chicken, or tofu, cut into bite-sized pieces
  • 2 eggs, lightly beaten
  • 2 cups of bean sprouts
  • 4 green onions, chopped
  • 1/4 cup of chopped roasted peanuts
  • Lime wedges, for serving
  • Optional garnishes: chopped cilantro, sliced red chili, additional peanuts

Instructions:

  1. Cook the rice noodles according to the package instructions until they are tender but still slightly firm (al dente). Drain the noodles and rinse them under cold water to stop the cooking process. Set aside. In a small bowl, whisk together the tamarind paste, fish sauce, and palm sugar until well combined. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the shrimp, chicken, or tofu to the skillet and cook until they are cooked through and slightly golden brown, about 3-4 minutes.
  3. Push the protein to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through, then mix them with the protein. Add the cooked rice noodles to the skillet along with the prepared tamarind sauce. Toss everything together until the noodles are well coated in the sauce.
  4. Add the bean sprouts and chopped green onions to the skillet and toss to combine. Cook for an additional 1-2 minutes until the bean sprouts are slightly wilted. Remove the skillet from the heat and sprinkle the chopped roasted peanuts over the pad Thai. Serve it hot, garnished with lime wedges and optional garnishes such as chopped cilantro, sliced red chili, and additional peanuts.

  • 1/4 cup maple syrup
  • 1 red apple
  • 2 cups apple cider
  • 3 black tea bags

Instructions:

  1. Boil 4 cups of water over high heat.
  2. Pour the boiling water into a pitcher and add the tea bags and maple syrup. Stir and allow to seep for 3 to 5 minutes.

Vegetarian alternatives can be a bit dull. So often at barbeques, the offering may be a bean burger or a fake meat burger made from soya. While these can be super tasty, it does get boring after a while. This recipe uses portobello mushrooms as a burger patty for a super succulent and rich flavor and topped with halloumi for even more deliciousness and some extra protein. This recipe is for four burgers. 

Ingredients:

  • 4 large portobello mushrooms
  • 5 ounces halloumi
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon extra virgin olive oil
  • 1 small red onion 
  • 1 large beef tomato
  • 4 iceberg lettuce leaves
  • 4 tablespoons mayonnaise
  • 1 cloves garlic
  • 4 burger buns

Instructions:

  1. Place the mayonnaise in a bowl and crush the garlic clove into it. Mix well then set aside.
  2. Finely slice the onion into rings and the tomato into discs. 
  3. Remove the stalks from the mushrooms and brush clean. Drizzle each mushroom with the extra virgin olive oil and sprinkle with some salt, pepper, and thyme. 
  4. Use your hands to rub the seasoning in, and then place the mushrooms under a grill on a medium heat, cooking for 5-10 minutes on each side.
  5. Meanwhile, slice the halloumi into 4 and place into an oiled pan. Gently fry for a few minutes on each side, until golden brown. 
  6. Slice each burger bun in half and dollop some garlic mayonnaise on each side. Add a lettuce leaf, a slice of tomato, and some onion.
  7. Place each mushroom into a burger bun and top with a slice of halloumi and the top of the bun, ready to serve.

This recipe for chicken soup includes bell peppers and sweet corn for a lovely mixture of flavors and textures, and it’s perfect to make in advance to have ready-to-go lunches all week, or for an easy and satisfying lunch at home. Recipe serves 4.

Ingredients:

  • 4 chicken breasts
  • 1 large white onion
  • 1 carrot
  • 1 stick of celery
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cans of sweet corn
  • 2 cups chicken stock
  • ¼ cup creme fraiche
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon smoked paprika
  • ½ tablespoon dried thyme
  • ½ tablespoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onion, carrot, celery, garlic, and bell peppers. 
  2. Chop each chicken breast into bite-sized pieces.
  3. Heat some oil in a large pot and add the chicken, cooking until no pink skin remains.
  4. Add the onion, carrot, and celery, season with salt and pepper, and cook for 10-15 minutes, stirring occasionally.
  5. Add the bell peppers, garlic, sweet corn, paprika, thyme, and oregano. Cook for another 10-15 minutes. 
  6. Add the chicken stock, creme fraiche, and cider vinegar. Increase the heat and leave to simmer for 15-20 minutes, stirring occasionally.
  7. Serve hot with crusty bread.

  • Add the cumin, cinnamon, paprika, garlic powder, salt, and pepper and cook for a further 5 minutes.
  • Drain the jackfruit and add it to the pan along with the chopped tomatoes, balsamic vinegar, hot sauce, and barbeque sauce. Add a splash of water and leave to simmer for 30-40 minutes, stirring occasionally.
  • Remove from the heat and use a fork to break the jackfruit up.
  • Slice the burger buns in half. Dollop a quarter of the mixture onto each one and top with vegan coleslaw.
