This Hearty Hungarian Goulash is Perfect for Feeding a Crowd

This goulash recipe is based on the traditional Hungarian dish which was often used as a great way to turn cheaper cuts of meat into a delicious, tender stew. The classic dish is based around beef, onions, and paprika, but you can adapt it to suit your tastes and use up any veggies you have around. This comforting meal is perfect when cooking for a group and any leftovers can be frozen for a later date. This recipe provides six servings. 

Ingredients:

  • 2.5 lbs stewing beef
  • 2 large brown onions
  • 4 cloves garlic
  • 3 carrots
  • 2 bell peppers (any color)
  • 2 cups beef broth
  • 2 cans chopped tomatoes
  • 2.5 tablespoons sweet paprika
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onions and garlic, and chop the carrots and peppers into small chunks.
  2. Chop the stewing beef into bite-sized pieces. 
  3. In a large pot heat some oil and add the onion. Fry for a few minutes and then add the paprika. Fry for a further 5-10 minutes.
  4. Add the beef and gently fry for 5-10 minutes.
  5. Add the carrot and pepper and cook for another 5-10 minutes.
  6. Add the garlic and season to taste. Cook for another 5 minutes.
  7. Add the beef broth and the chopped tomatoes and increase the heat. 
  8. Leave to simmer for 30-40 minutes, stirring occasionally. 
  9. Serve hot with potatoes, pasta, or crusty bread.
