Yule log is an indulgent, rich cake formed from sponge cake rolled around a thick chocolate cream frosting. When dusted with icing sugar, the finished product looks a little like a yule-tide log, hence the name. Delicious served with warm custard or ice cream, this is a great dessert to make at any time of year.
Ingredients
- 2 cups of self-raising flour
- 1 cup of caster sugar
- 3 eggs
- 1 cup of unsalted butter
- 2 tablespoons of milk
- 1 teaspoon of baking powder
- 2 tablespoons of cocoa powder
For the frosting: - 1/2 cup of unsalted butter
- 3/4 cup of icing sugar
- 1 tablespoon of chocolate spread
- 2 tablespoons of cocoa powder
Instructions
- Sift the flour and baking powder into a large bowl.
- In a separate bowl, cream together the butter and sugar. Add the cocoa powder once the mix is smooth and pale.
- Sift the flour into the butter and sugar mix, fold in well. Crack in the eggs and whisk in, then whisk in the milk.
- On a greased and lined baking tray, pour out the cake mix to form a rectangle or square about 1 inch thick.
- Bake the cake in an oven heated to 370 degrees F for 35 minutes.
- Make the frosting by whisking together the butter, icing sugar, chocolate spread and cocoa powder.
- Remove the cake from the oven and allow it to cool. Spread some of the frosting over the top of the cake, and then carefully roll it into a cylinder.
- Once the cake is formed, frost the top and sides and dust with icing sugar to complete.
