Yule log is an indulgent, rich cake formed from sponge cake rolled around a thick chocolate cream frosting. When dusted with icing sugar, the finished product looks a little like a yule-tide log, hence the name. Delicious served with warm custard or ice cream, this is a great dessert to make at any time of year.

Ingredients

  • 2 cups of self-raising flour
  • 1 cup of caster sugar
  • 3 eggs
  • 1 cup of unsalted butter
  • 2 tablespoons of milk
  • 1 teaspoon of baking powder
  • 2 tablespoons of cocoa powder

    For the frosting:
  • 1/2 cup of unsalted butter
  • 3/4 cup of icing sugar
  • 1 tablespoon of chocolate spread
  • 2 tablespoons of cocoa powder

Instructions

  1. Sift the flour and baking powder into a large bowl.
  2. In a separate bowl, cream together the butter and sugar. Add the cocoa powder once the mix is smooth and pale.
  3. Sift the flour into the butter and sugar mix, fold in well. Crack in the eggs and whisk in, then whisk in the milk.
  4. On a greased and lined baking tray, pour out the cake mix to form a rectangle or square about 1 inch thick.
  5. Bake the cake in an oven heated to 370 degrees F for 35 minutes.
  6. Make the frosting by whisking together the butter, icing sugar, chocolate spread and cocoa powder.
  7. Remove the cake from the oven and allow it to cool. Spread some of the frosting over the top of the cake, and then carefully roll it into a cylinder.
  8. Once the cake is formed, frost the top and sides and dust with icing sugar to complete.
