Ingredients:
- 8 large eggs
- 1/2 cup of milk
- 1 cup of diced bell peppers (assorted colors)
- 1 cup of diced onions
- 1 cup of diced tomatoes
- 1 cup of shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup of diced ham or cooked bacon (optional)
- 2 tablespoons olive oil
- Salt
- Black pepper
- Fresh herbs (such as parsley or chives), for garnish
Instructions:
- Preheat your oven to 350°F (175°C). In a large bowl, whisk together eggs and milk until well combined. Season with salt and black pepper.
- Heat olive oil in an oven-safe skillet over medium heat. Add diced onions and bell peppers to the skillet, sautéing until they become soft and translucent. Pour the whisked eggs over the sautéed vegetables in the skillet, distributing them evenly.
- Sprinkle diced tomatoes, shredded cheese, and diced ham or cooked bacon (if using) over the eggs. Allow the edges of the frittata to set in the skillet, lifting them with a spatula to let the uncooked eggs flow underneath.
- Once the edges are set, transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is puffed and golden brown.
- Carefully remove the skillet from the oven using oven mitts. Garnish the frittata with fresh herbs and let it rest for a few minutes before slicing.
