Are you in the mood to spice up your dinner routine with something exotic yet surprisingly doable? Let’s talk about making Green Curry, a dish that’s a beloved gem in Thai cuisine. This isn’t your average ‘throw everything into a pot’ kind of recipe. It’s a unique and aromatic blend of flavors you’ll love.

Ingredients

  • Green curry paste
  • Coconut milk
  • Boneless chicken, beef, or tofu
  • Thai eggplants or bamboo shoots
  • Bell pepper
  • Basil leaves
  • Fish sauce (or soy sauce for vegetarians)
  • Palm sugar or brown sugar
  • Lime juice

Instructions

  1. In a large skillet or wok, heat a tablespoon of coconut milk over medium heat. Add a few tablespoons of the green curry paste and fry until fragrant.
  2. Add your choice of protein and cook until it starts to brown. Then add vegetables like Thai eggplants, bamboo shoots, and bell pepper.
  3. Pour in the remaining coconut milk, bringing the mixture to a gentle simmer. Allow it to cook until the protein is done and the vegetables are tender.
  4. Add fish sauce (or soy sauce), palm sugar, and a squeeze of lime juice. Adjust these seasonings according to your taste preference.
  5. Just before serving, stir in some fresh basil leaves for an added burst of flavor. Enjoy!
