If you’ve not tried a chicken parmigiana before, get ready to discover a delicious and comforting Italian classic that’s sure to become a family favorite. Also known as chicken parmesan, this dish features tender chicken breasts coated in crispy breadcrumbs, smothered in marinara sauce, and topped with melted mozzarella and Parmesan cheese. Here’s a recipe to make it.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup of all-purpose flour
  • 2 large eggs, beaten
  • 1 cup of breadcrumbs (plain or seasoned)
  • 1/2 cup of grated Parmesan cheese
  • 2 cups of marinara sauce
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil leaves, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick. Season both sides of the chicken breasts with salt and pepper.
  2. Set up a breading station: place the all-purpose flour in a shallow dish, the beaten eggs in another shallow dish, and the breadcrumbs mixed with grated Parmesan cheese in a third shallow dish. Dredge each chicken breast in the flour, shaking off any excess. Dip them into the beaten eggs, then coat them evenly in the breadcrumb mixture, pressing gently to adhere.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side. You may need to cook the chicken in batches to avoid overcrowding the skillet.
  4. Transfer the browned chicken breasts to a baking dish. Spoon marinara sauce over each chicken breast, covering them generously. Sprinkle shredded mozzarella cheese over the top of each chicken breast, covering them evenly.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Once cooked, remove the chicken parmigiana from the oven and let it rest for a few minutes before serving. Garnish with chopped fresh basil leaves, if desired, and serve hot alongside your favorite pasta or salad.
