Packed with fiber, folate, iron, and vitamin C, beetroots are one of the healthiest veggies that you should add to your daily menu ASAP. They can improve your blood flow and lower blood pressure, and using them as the main ingredient in your hummus is one of the easiest ways to consume them.
Ingredients:
- 3 medium-sized beets
- 2 lemons
- 5 cloves of garlic
- 100 grams chickpeas
- 50 milliliters of water
- salt
Instructions:
- Boil your beets in a large pot for about 40 minutes, giving them enough time to soften.
- Once your beets are boiled, wash them, peel them, and cut them into pieces.
- After squeezing your lemon, place it in a blender with beets, chickpeas, garlic, 50 milliliters of water, and a pinch of salt, and blend until smooth.
- Enjoy your hummus fresh and refrigerate leftovers for up to five days.
