One Flapjack Recipe, Endless Adaptations

The humble flapjack has fallen out of favor, with many cafes now offering cakes that are seen as more interesting or more complex to create. But the beauty of the flapjack lies in its simplicity, and in its adaptability. Use the simple recipe below and adapt it in multiple ways to create fantastic flapjacks to suit all tastes.

Ingredients:

  • 400 grams of oats
  • 100 grams of golden syrup
  • 200 grams of butter

Instructions:

  1. Melt the butter in a non-stick pan, then stir in the golden syrup (be careful not to let it burn).
  2. Stir the oats through until they are completely coated in the buttery mix.
  3. Transfer to a baking tray, press the mix down so it has a thickness of about 2cm.
  4. Bake at 150°C (300° F) for 15 minutes. The flapjacks will harden and set as they cool.

Adaptations

A classic adaptation is adding dark or milk chocolate chips to the mix just before it gets baked. You could do the same with dried fruit including raisins or chopped dates. Adding chopped nuts boosts the nutritional value of the flapjacks and adds a nice texture. You could reduce the amount of golden syrup in the recipe and substitute some of it for a fruit jam for a flavor twist. The flapjacks are also delicious with a topping, you could try melting chocolate over the top or adding a layer of yogurt and fresh fruit.
