Hush puppies are a southern classic side dish. They are crunchy balls of fried cornmeal and they couldn’t be more delicious. These fritters are perfect to have any time you want something crunchy and fried on your plate, but want a step up from french fries. The ingredients are simple, but when it all comes together, it is really something special.
Ingredients
The main star of this dish is cornmeal. This is because it grew and still grows abundantly in the southern part of the US, making it a staple for many dishes we know and love today.
Method
- In a bowl, combine yellow cornmeal along with flour, baking powder, salt, and a tad bit of sugar. You don’t taste the sugar when they’re done, it’s mostly to encourage browning during the frying. Whisk the dry ingredients together until well combined.
- In a separate bowl, mix together the egg, milk, and whatever kind of onion you want to use.
- Add the wet ingredients into the dry but make sure to combine it just enough to mix them together. Don’t overwork the batter or the hush puppies will be tough.
- Make each hush puppy about the size of a ping-pong ball, fry in peanut oil or something that has a high smoke point, and drain on a paper towel to cool.
