Saag paneer is a classic and flavorful dish with fresh spinach, aromatic spices, and cubes of paneer cheese at its heart. This is a simple dish but one that will warm you inside and out. Here’s a recipe for how to make it.

Ingredients

  • 1 pound of fresh spinach
  • 1/2 pound of kale
  • 1 large onion
  • 3 tomatoes
  • 3 green chilies
  • 6 cloves garlic
  • 1-inch cube of ginger
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt
  • 4 tablespoons of ghee or vegetable oil
  • 1 cup of paneer
  • Fresh cilantro

Instructions

  1. Blanch the spinach and kale in boiling water for 2-3 minutes. Blend into a smooth puree using a blender or food processor.
  2. In a large skillet or pot, heat ghee or vegetable oil over medium heat. Add chopped onions and sauté until golden brown. Add minced garlic, grated ginger, and green chilies. Sauté for an additional 2 minutes until fragrant. Stir in the chopped tomatoes and cook until they soften.
  3. Add turmeric powder, cumin powder, coriander powder, and garam masala. Mix well. Pour in the blended spinach kale puree. Season with salt. Allow the mixture to simmer on low heat for 15-20 minutes, stirring occasionally.
  4. In a separate pan, heat ghee or vegetable oil over medium heat. Add the cubed paneer and sauté until golden brown on all sides. Add the sautéed paneer to the simmering saag. Mix gently to coat the paneer in the flavorful sauce. Simmer for an additional 5-7 minutes to allow the flavors to meld.
  5. Garnish with fresh chopped cilantro before serving. Serve the saag paneer hot with naan or rice. Enjoy!
