This Simple Muffin Recipe Will Be Your Saving Grace

There is nothing like waking up in the morning and having the smell of freshly baked muffins rising up from the kitchen. This might seem like an impossible task when you take into account everything that life throws at you, but in reality, making muffins from scratch couldn’t be easier. Here is a blueberry muffin recipe that will knock your socks off.

  1. Preheat your oven to 400F and fill your muffin tins with paper liners.
  2. Stir together milk, an egg, vegetable oil in a bowl until well combined.
  3. Add in blueberries along with flour, baking powder, and sugar.
  4. Mix the batter together in as a few strokes as necessary. This will keep the muffins light and spongey.
  5. Pour the batter into the muffin tin and bake for about 20 minutes.

Pro tips:

You can substitute any type of berry or fruit in this recipe, whether it’s a fruit that is in season, or simply what you have frozen in the freezer. Just make sure the pieces are small.

Whatever fruit you use, make sure you cover it in flour beforehand so when you add it to the batter they don’t all fall to the bottom, but instead, disperse evenly throughout the muffin.
