Oatcakes are a traditional Scottish savory biscuit, made using a mix of oatmeal and flour. Ingredients (to make 12)
- 1 cup of gluten free oatmeal
- 1/2 cup of gluten free plain flour
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 3 tablespoons of vegetable oil
- 3 tablespoons of warm water
Instructions:
- Mix the flour and oatmeal together in a large bowl. Mix in the baking powder and salt and stir well.
- Stir in the warm water and then add the oil. Keep mixing until the dough forms into a smooth, but not sticky, ball. Add a little more oatmeal if the dough is too sticky.
- Roll the dough onto a floured surface and use a cookie cutter to shape the oatcakes.
- Place them on a lined and greased baking tray, put into an oven heated to 350 degrees for 15 – 20 minutes.
- Leave the oatcakes to cool for half an hour.
