How To Make the Best Olive Pesto At Home

Basil pesto is definitely the most famous variety of pesto but you’ll be surprised to learn there are actually countless ways to customize and experiment with this sauce. One fun twist on the classic is olive pesto, which works as a yummy dip and snack. You can also use it as a paste on a sandwich for added flavor. 

To make the best olive pesto, here’s what you’ll need.

Ingredients

  • 1 cup pitted green or Kalamata olives (but really any olives will work so choose your favorite)
  • 2 cups fresh basil leaves
  • 2 cloves minced garlic
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts (or your choice of nuts)
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

The recipe is so simple. In a food processor, simply blend olives, fresh basil, garlic, Parmesan, nuts, and a pinch of salt and pepper until finely chopped. If you want, toast your nuts a bit ahead of time for a deeper nutty flavor. 

While blending, drizzle in olive oil for a creamy consistency. Lastly, add fresh lemon juice for a zesty touch and adjust the seasoning to taste.
